Ingredients

1 1/2 tsp ground cinnamon | 1 pinch nutmeg |
1 pinch sea salt | 134g coconut sugar |
Coconut whipped cream | 3/4 tsp fresh ginger, grated |
3 tbsp fresh apple juice or water | Optional Servings: |

3 tbsp cornstarch or arrowroot starch | – Coconut whipped cream |
1 tbsp coconut oil (optional) | |
6-7 apples, peeled, cored, quartered, and thinly sliced lengthwise |
Instructions
Preheat the oven to 175 °C and prepare a baking dish.
Add sliced apples to the baking dish and top with coconut sugar, 1 tablespoon coconut oil, 2 tablespoons lemon juice, pinch nutmeg, 1 1/2 teaspoons ground cinnamon, 3 tablespoons corn starch, 3/4 teaspoon fresh grated ginger, pinch of salt and 3 tablespoons fresh apple juice or water. Toss until combined, then cover with foil.
Bake in a preheated oven at 175 °C for about 45 minutes, covered.
Remove foil carefully and continue baking until apples are fork-tender and slightly caramelized, for another 10 to 15 minutes.
