Cinnamon Baked Apples

Ingredients:

1 1/2 tsp ground cinnamon

1 pinch sea salt Coconut whipped cream

3 tbsp fresh apple juice or water 2 tbsp lemon juice

3 tbsp cornstarch or arrowroot starch 1 tbsp coconut oil (

optional) 6-7 apples, peeled, cored, quartered, and thinly sliced lengthwise

1 pinch nutmeg

134g coconut sugar

3/4 tsp fresh ginger, grated

Optional Servings:

Vanilla bean coconut ice cream

Coconut whipped cream

Method:

Step 1. 
Preheat the oven to 175 °C and prepare a baking dish.

Step 2. 
Add sliced apples to the baking dish and top with coconut sugar, 1 tablespoon coconut oil, 2 tablespoons lemon juice, pinch nutmeg, 1 1/2 teaspoons ground cinnamon, 3 tablespoons corn starch, 3/4 teaspoon fresh grated ginger, pinch of salt and 3 tablespoons fresh apple juice or water. Toss until combined, then cover with foil.

Step 3. 
Bake in a preheated oven at 175 °C for about 45 minutes, covered.

Step 4.
Remove foil carefully and continue baking until apples are fork-tender and slightly caramelized, for another 10 to 15 minutes.
